She noted that last year, when Legends first began operations, Legends requested a pre -operational inspection with Regional Inspector Paul Gilpin. However, upon arriving at the site, Mr. Gilpin discovered that construction was still underway and the facility was not ready for inspection. During the subsequent inspection, Mr. Gilpin observed that three grills were in very poor condition and that a squirrel nest was present in one of the trailers. Mr. Fishman apologized for the oversight regarding the grills and stated that Legends had hired a pest control company to address the pest issues on site. Ms. Donovan -Palmer encouraged Legends to work closely with Live Nation to ensure that all required preparations are completed in a timely manner so that health permits are not issued on the day of the first concert. She also informed the Board that the Health Department has since implemented a policy requiring all pre -operational inspections by both the Health Department and Fire Department to be successfully completed at least three days before an event. Failure to meet this requirement will result in the event not being permitted to proceed. Mr. Paul Gilpin then addressed the Board and clarified that the required health permit must be obtained at least 72 hours before food is served on site. He further explained that the permit must also be obtained at least 72 hours before Legends begins receiving food deliveries or storing food on site. Representatives from Legends Music, including Tyler Menseler, Amanda Parker, Mike Fishman, and Kevin Duquette, approached the podium to request a variance from the Board of Health regarding Food Safety Certificate requirements. Legends Music requested approval to operate with seven (7) certified Food Safety Managers. Ms. Parker explained that members of the management team are continually circulating throughout the facility, monitoring business operations and ensuring compliance. She further stated that Legends utilizes culinary leads assigned to specific food service areas zoned out to oversee food safety practices within their designated spaces, while management provides overall operational oversight. Not every food station is open for every event. The challenge is tying an employee to one location only within the facility, while the goal is to have them be able to roam freely and work multiple locations. Legends Music reported that they have recently installed iCertainty temperature monitoring sensors in all walk-in coolers and freezers. These sensors continuously monitor equipment temperatures and provide instant alerts if temperatures fall outside the required range. Legends Music also informed the Board that they have added a new food truck, Roxy's Grilled Cheese, for larger shows this year. In addition, Traveling Tom's Coffee Truck will be available during select concerts later in the season, primarily from late summer into early fall. The Board requested that Legends Music LLC provide written documentation summarizing the items discussed during the meeting and submit updates if any operational changes occur. Ms. Donovan -Palmer also requested that inspection reports for each show be submitted to her for review. Mr. McGarry made a motion to approve the variance for Legends Music LLC dependent upon a written overall management food service safety plan for the site sent to the health department contingent that the plan is approved. Passed unanimously 3-0. /IIl DtscussioiY on Bod Art Re utattons Possible l/ote Y Ms. Donovan -Palmer informed the board that Town Council is not ready to review the regulations at this time.
