Amy Donovan -Palmer; Health Agent. Absent: None.
The meeting of the Board of Health (BOH) was called to order at 6:00 pm by Chair Antonia Blinn.
Trattoria Romana has had several repeat violations over the course of last year, despite multiple
attempts of the BOH offering assistance. There have been several inspections and reinspections from
now and October where the same issues keep coming up. Ms. Donovan -Palmer mentions how Ted
Monohan sent an action plan in October on self -monitoring and manager oversight with minimal
details, which the BOH is interested in the specifics. Discussion on how Trattoria Romana can
implement their own policies and make changes before meeting with Ms. Donovan -Palmer, food
inspector Paul Gilpin, or food inspector Kevin Duquette about their checklist and action plan.
r Recommendations:
• Having more staff members food safe certified (4 employees are food safe certified, 2 are
managers)
Have a consultant come in to educate staff and help prevent repeat violations
• Have a manager specifically in charge of making sure things run smoothly, things are being
followed to regulations on a regular basis
• Mr. Duquette suggests a need for active managerial control to have people take action on for
the opening and closing of the restaurant, be in the restaurant everyday correcting staff
o Someone else working with the staff who is bilingual, sole role as a manager to walk
around and see how everything is
Mr. Healey mentions how if Trattoria Romana does not implement these changes and have them be
satisfied by next Tuesday, a consultant needs to be brought in.
Mr. Healey makes a motion to approve that by Tuesday of next week, there will be an action plan
presented to Ms. Donovan -Palmer that includes items around specifics of food certification classes
and the number, addressing the priority and priority foundational violations, and addressing
language access in the plan, and for Trattoria Romana to reappear on January Sth at the next BOH
meeting to provide an update on how things are going. 2nd by Ms. Frenette. Aaaroved 5-0.
Motioatod,' nnmadeey, 2n' by Mr. Wilson at 7:04 pm. Approved 5-0.
