Scott Sisson, Owner Trattoria Romano, Ted Monahan Financial Controller are in attendance. Preparation of chemicals • 4/21 -chemicals stored with beverage and condiments, chemicals in unmarked bottles • 10/21- sanitizer near open condiments, chemicals in unmarked bottles • 11/21- chemicals near the bar, chemicals in unmarked bottles and hand sink blocked • Most recent inspection staff medications were stored with spices First conversation with this restaurant • Mr. Sisson explained that the one major problem is lack of training and turnover. They are working on training, explaining where chemicals go and are working with language barriers. • They are working with ECOLABs to have labels produced for chemicals. Recommendation: • There needs to be at least one person in the building at all times that is food certified. • Develop Standard Operating Procedures which will help with training and turnover • A written plan is requested to address repeat violations. The plan will include how the priority and priority foundation violations will be addressed. The plan must be submitted by January 18, 2022 to BOH. SAKE Sake continues to have violations and has been asked to come to this meeting to discuss. Wen Lin and Translator Maggie are in attendance • 10/21- at inspection the Fliptop Refrigerator was not holding temperature. Temps between 43° and 46° F. Ice was being used to hold temps. • 11/21 -follow-up Fliptop continues to have problems. Still at 430-46OF and ice being used to hold temps. o Mr. Duquette recommended replacing the Fliptop unit completely. • 12/15/21- Follow-up visit. Fliptop was not replaced, continues to not hold proper temperature and ice being used. In addition, the bottom of the Fliptop was at a temperature of 43"-46' F and Mr. Duquette required Sake to throw out all of the food that was in the bottom of the Fliptop. • There also was no active person onsite who was in charge. According to the Mansfield Food Code there needs to be a Food Safety Manager on site at all times. Regardless, if that person stepped out for 5 minutes it is a requirement that at all times a Food Safety Manager must be onsite. Much discussion and concern followed. • A Fliptop has been purchased. States the unit will come in a week. • They have a confirmation receipt but no date for delivery/install. o Mr. Healey is requesting a date to be provided for delivery and install. • BOH recommends hourly refrigerator checks to test temperatures. Starting at 11AM-Closing. Records need to be available. • Reiterated to Wen Lin that there always has to be a person in charge onsite. o They are trying to train employees and stay up to code. • Mr. Healey helped Sake with a checklist last year. Recommended reviewing. Ms. Blinn referred Sake to online documents for time/temp checks and different languages. • Motion to require SAKE to replace their Fliptop Refrigerator. Until a new refrigerator is installed, SAKE must do hourly checks. One hour before opening thru closing temperatures of food must be taken with a thermometer. Temperatures must be logged regularly and submitted to the Health Clerk two times per month. In addition, logs must be available to review at the request of the BOH at any time made by Mr. Healey, 2nd by Mr. Wilson. o VOTE 5-0 passes Mansfield House of Pizza (MHOP)requests a variance to report FOG every three months rather than every month. MHOPs FOG levels are consistently below 5%. The restaurant uses all paper products. They wipe down all the pans with paper towels prior to putting in the dishwasher. • Motion to approve the variance for Mansfield House of Pizza to report FOG numbers every three months rather than every month made by Mr. Healey, 2"d Mr. Wilson o VOTE 5-0 passes • Current mask order provided • Received three correspondents from residents in regards to wearing masks. Asking BOH to consider instating a mask mandate. • Per Ms. Donovan -Palmer o Levels are HIGH in all counties - major spike • 11 cases per day o Positivity rate continues to rise o Breakthrough cases - 37.7% of cases o Eligible for vaccine - 43.2% of cases o Ineligible for vaccine - 19.1% of cases Much discussion followed among board members and what they are experiencing around town. To summarize: Requiring masks may cause frustration within the community. Many BOH members have witnessed masks being worn by employees and patrons of local stores. As well as signs on doors recommending masks. A question was raised how a mask mandate would be enforced if we were to mandate masks. Mansfield does not have this capacity. An example was used: Sharon has a mandate, however it was observed that some residents are still not wearing masks. At this time, masks would benefit the community as the hospitals are inundated. We have tried health education, podcasts, social distancing. As a Board what else can we do?? o Suggestion made to work with neighboring towns to draft a letter to petition the Governor to rethink the State's decision on masks. • At this time the BOH has agreed to not make any changes to the current mask mandate. • Interviews are set up for next week. • Shared inspector position is oosted. None. 01 NONE • Motion to adjourn at 8:56pm made by Mr. Healey, 2A by Ms. Frenette VOTE 5-0 PASSED Clerk 2/8/22 Date
